My brother puts them in flour afterwards and fries them to make them crisper. Pretty damn good

Iv never tried that. Normally I will poach the wings in a flavorful liquid before tossing them on the grill. They dont seem to dry out as bad that way.

Do you let them marinate usually over night? I've yet to let them sit in some kind of wing sauce.

I haven't tried marinating them in hot sauce. Sounds like a good idea.
