The recipe I use is pretty good. Cocoa powder seems like the secret.

I don't always use the pork sausage, periodically substitute buffalo with ground turkey, and for the tomatoes I always use the canned fire roasted tomatoes.

Paleo Chili Recipe

Recently I've been using an instant pot to cook it, but today I've opted for crock pots. I think the flavor is better in a slow cook not to mention the instant pot seems to destroy the tomatoes.

Alright, whatcha got for mashed potatoes.

My favorite is white cheddar sage mashed potatoes, the best damned mashed potatoes I've had, typically I just buy them from a local grocery store's kitchen...but they've removed them from the menu and deleted the recipe. So I'm working through the actual measurements, ingredients are McCormick rubbed sage, Boars Head White Cheddar, and potatoes.
 
I don't normally go too crazy with my taters. Roast a couple bulbs of garlic and occasionally powder a bit of rosemary with my mortar and pestle. Real butter and kosher salt. I've got about 6 different kinds of salt that I haven't tried yet. Going to throw down when my son comes home from his first deployment right after Christmas.
About the only time I measure is when I'm making a pie crust, cheesecake or baking bread.
 
@rick4bama, Put over a hot buttered biscuit.....nothing quite like it.
We were dirt poor growing up and it was a treat when mama made it. I only made my first time a couple of years ago. Something jogged my memory and I remembered it. Made it for my kids and they flipped out because I never made it before.
 
Follow this recipe except double the cocoa and toss in a pinch of salt. Make biscuits from scratch.

Chocolate Gravy

Tomato gravy is a big hit around my house too. Around the holidays with a good sized crowd I have had to make all 3. Sausage, mater, and chocolate. I just sold my 18 inch cast iron skillet in a yard sale. Made enough biscuits in it to feed a small army.

@XXL TideFan we wasn't dirt poor. But I never had it, but red eye gravy, soaking your butter biscuit in your coffee was another. Best think my mamma did was show my wife how to make good old homemade scratch biscuit. You see she a yankee, she from New Jersey.
 
@rick4bama, Red eye gravy to me is to pour the fat off of sugar fried ham and use coffee to loosen all the bits and pieces in the pan. The coffee is poured into the ham grease and then spooned over biscuits. I have the ham, red eye gravy, biscuits, grits, and over easy eggs 1 time a year around Christmas.

I'm seriously hungry now. That's my favorite breakfast and my family calls me the breakfast king.
 
@footballer, Can't ruffle my feathers brother. Toss a pinch of salt in your chocolate gravy. Use some heavy cream in place of some of the milk. Around the holidays I use only heavy cream and it will blow your mind.

One of the greatest pleasures I've had in life is making chocolate gravy and homemade biscuits for Yankees. To see their snarl when they here "chocolate gravy" and then watching them devour the lot and beg for more is priceless.
 
@bcracker, I do pizza and bake Italian bread. The bread and pizza dough recipe came from a book by the Frugal Gourmet

I'm familiar with him (showing our ages, right?). I had a book by him called Cooking with Wine, I believe. I lost it during one of our many moves.

We have "Spaghetti Night" at our house every Friday (Sweetater is Italian, by the way). She makes the sauce and meatballs and I make crusty French bread with a garlic butter spread. Man, that stuffs good!
