Anyone suggestions in low temperature foods that won't take all day since I have to work?

Just leave it empty, let it cook around 200-275.

For mine, I leave the bottom vent open about 1/8" - 1/4" and the daisy wheel up top I leave it half way (like the below photo)

Chicken is always a good go to, porkchops are an option as well. But like Plano is talking about, you need to season it first. Also, if you are not familiar with The Egg, don't drop the lid and beware of backdrafts.

You can cook tonight, just let it run on low while you're working to get the gasket sealed with low heat.

Start it really early and maintain the low temp. then crank up the heat when you are ready to grill. It will go from 250 to 800 in less than 20 min. .
