There's actually two Carolina sauces. One most commonly referred to as an East Carolina baseāvinegarāand a South Carolina base which is a mustard base. It's the later I'm around all the time, and the later I can't stand.
The East Carolina sauce's origin is really from North Carolina.
Actually, there's three now that I think about it. The last one coming from the Piedmont area and it's also referred to as a West Carolina sauce. It's about the same as the East, but with tomato sauce/paste or sometimes ketchup used to cut down on the bite.
If you want a historical perspective, you can usually find some being cooked or at least talked about here at the Slave Market. You find someone from a Gullah heritage...you're set.

I have been so busy working that I haven't put anything on it in a couple of years. Real life has a nasty habit of interferring with my hobbies and distractions.
