@XXL TideFan, Much like BBQ, I've found sausage gravy is a bit indigenous. Is that the right word? Maybe.
I'd never even dreamed of, much less heard of, a mustard based BBQ until I moved to the Low Country. Now it's not uncommon to find four different styles within a miles' radius of each other.
I'm much prefer the gravy from The Waysider, or Rama Jama's for that matter, over his at The Hominy Grill. But, his has a great flavor that sets it apart. I've had that dish a half of a dozen times and have never been disappointed. Their Jalapeno Hushpuppies are really good.
I can honestly say that I didn't have any gravy during my time in and through the Carolinas. However, I got 4 different bbq sauces served at a hole in the wall in Havelock, NC in the early 80s.
