It's recommended to run the first few cooks on low heat to get the gasket to seal properly. If you are doing a slow cook (ribs, shoulder, brisket, chicken) you should be ok. Don't let it get over 350-400 on the first cook. You'll have to cook on it a few times to really understand how much of an opening the bottom vent and daisy wheel up top will keep specific temperatures.
Also, make sure you calibrate the thermometer too
