Dough is prepared...on the island resting for a few hours. Makin' corn tortilla's to go with the corn...still putting ingredients together in my head.
Sriracha mayo goes well if you don't want to make anything. A cilantro and lime crema is quick and good too....didn't take long.
Purple and Vadelia onions with three colors of peppers in my waterless cookware...tossing in some small, steamed shrimp along with...wrapped in the warm tortillas.
Not sure what, or even IF, I'll need any type of dressing.
I like the idea of both. This one sounds like a better fit for a lunch on the lighter side. I have been playing with the idea of something with the consistency of a vinaigrette. I won't get any "sog" out of the peppers and onions...still crunchy and juicy. I don't want them to "drip."A cilantro and lime crema is quick and good too.
