When I saw the game in real time I thought the Vandy guy had signalled for a fair catch, but even if he had not he has the right to catch the ball. I'm nit sure what led to Wade's celebration on the filed. I wonder if the hit was not a retaliation for something Vandy had done earlier in the game. The Commodores are getting pretty chippy these days. Georgia players were provoked into dubious actions against them as well.
I see it as an obvious fair catch signal in the eyes of a defender, whether the receiver was giving a fair catch signal or shading his eyes. The receiver may move to make a fair catch after signaling. The defender should have backed off and positioned himself for a possible fumble. The receiver cannot advance the ball after giving the fair catch signal. Therefore the defender creamed the fair catching defender and the call by the official was correct.
