Wet aged this bad boy for 30+ days. Usually not as good as dry aging but I lost my dry age fridge last year (RIP), but the color, tenderness, and taste are very similar. Beef Tenderloin (Filet Mignon).

That looks like a lot of fun. Oven, grill ... got pan seared, oven baked written all over them IMO...

@PurlJam one of the best things about this season is watching videos on different takes on food. I've found, maybe 10 percent worthy to try...at least a variation of...

My MawMaw made me Irish potato candy for my birthday every year ( today). Now my wife makes it for me.

That stuff is like cornbread dressing on thanksgiving. I try and eat my weight in those things during the holidays.

My mawmaw also made me a dish she called “ soppums” . It was sugar , butter and milk melted a thick sauce she would put in a bowl. Then I would kinda roll the bowl around to get the sauce on the sides to cool slightly, then use my finger to sop it up and in the mouth. It was so good . My wife hasn’t been able to replicate the recipe to get it just right.

I got about 10 adults coming over tonight for just that. They come to get away because I don't have the two things they are running from today.

My Christmas dinner is going to rock. I have ham and turkey, tomatoes, other stuff like...it's sandwiches on sour dough. Ain't a damn thing hot unless you toast your bread. I ain't.

It's about like Festivas pt 2...gonna hear them bitch about things today I'll laugh at...and remind them of. There's not a lot funnier than saying, "your wife gonna like that?"

Straight up sear temp (600+) on Kamado about two and a half minutes on each side, rest at 170 in the oven for about 20 minutes, medium rare.

Ha ha. I don't even attempt that shot. I have no wedge game. I use my pitching wedge everywhere. Around the greens I'm not great. I can get to them pretty easy, but not great where it matters. Otherwise I could have played college golf.

The flop ... best shot in my bag in many areas. Seriously...if I'm around the short stuff...my 64...I'm within a couple of feet. I think I"ve mentioned this...I practice with my LW in front of my LR window. Back and forth over the house...
