The new commercials may have been filmed prior to Covid. But, I am betting he just hasn't agreed to be in them. They aren't a requirement of winning, even if most do agree now.

The standard Welcome to the Heisman House commercial would have been filmed way before he had his first practice normally. The knee might be why he wouldn't be in newer ones but not at all why he is in none of htem.
