| FOOD Homemade Ice-cream Recipe?

1 can Evaporated milk
8 ounces cool whip
1 tablespoon Vanilla Flavoring
¾ cup sugar
1 Instant Jello Vanilla Pudding (small size)
enough whole milk to fill your freezer to the "fill to here" mark

mix all these ingredients well and sweetened to taste. I usually place the mixed ingredients (in the freezer) in the fridge for a couple of hours before freezing.

Or if you want something a little different:

Coconut Ice Cream

2 cups whole milk

1 (14 ounce) can cream of coconut

3 cups half and half cream

1 No Sugar Added Vanilla Pudding Mix

2 cups sweetened flaked coconut (optional)

3 - 4 tbsp Vanilla flavoring (optional)

1 cup sugar (optional)

Combine the milk, flavoring, pudding and cream of coconut in the container of a food processor or blender, and mix thoroughly. Stir in cream and flaked coconut. (Toasting the coconut will add a slightly different taste.) For a Strawberry flavor without added sugar, use the No Sugar Added Strawberry ice cream mix found at Wal-Mart. Mix well.

Taste and add sugar if needed to satisfy your sweet tooth. Mix well if you add the sugar.

Add enough milk to fill the freezer of your ice cream mixer. Pour into a container and chill in the freezer for an hour. Shake or stir chilled mixture well and then freeze in an ice cream freezer.

Do not confuse sweetened cream of coconut-used in this recipe-with unsweetened coconut milk or cream. The sweetness in this recipe comes from the cream of coconut. Coco Lopez cream of coconut is the brand we use. Whatever brand, get the one with the most sugar.

Mmm Mmmm good!
