From what I recall always reading there is one "host" that is designated to show a recruit around on their visit. I'm sure we can all agree with NIL, school, Fall Camp, and other obligations it's not easy to find time on William Anderson, Dallas Turner, and Bryce Young's calendar to host every big recruit that comes to town. That being said, I would have imagined they figure out how to get one of those guy on a key flip target/opportunity like Keon Keeley. Koht is a similar build to Keeley (a little shorter), same position I believe, and also from Florida, so I imagine they felt he could handle the recruit and compared highly to him in a number of ways. I tend to question these matchups myself a good number of times, but then realize Saban knows exactly what he is doing and Koht must have his act together and be a good ambassador for the program.
