This is delicious.

Ingredients

1 cup grated mozzarella
1 9-inch prebaked deep dish pie shell
1/2 cup chopped green or vidalia onion
10 fresh basil leaves, chopped
4 tomatoes, peeled and sliced
1 cup grated cheddar
1 cup mayonnaise (the real thing not the low fat stuff)
3 or 4 slices of bacon
salt and pepper
1 teaspoon sugar (optional)

Directions

Preheat oven to 350 degrees.
Slice the tomatoes. Place the tomatoes in a collinder to drain.
Cook bacon until crispy. Allow to cool and break into small bits.
Mix mayonnaise, cheddar cheese, mozzarella cheese, bacon, salt and pepper.
Layer the tomato slices, basil, and onion in pie shell.
Season with salt and pepper.
Sprinkle the sugar if used.
Spread the mayonnaise and cheese mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.

Cut into slices and serve warm but it is very good cold.

We make a similar but quick and dirty version something like this we call hamburger pie. We usually cut it in half in a 8x8 or 9x9 pan and have it and 4 crescent rolls also.

2 lbs hamburger
1 package onion soup mix
24-32 oz no salt tomato sauce
Basil, oregano, etc
as much cheese as you want (we go 4 cups but 2 is fine for some)
1 package fridge crescent rolls

Preheat oven based on crescent roll temp
Brown hamburger, drain and return to pan
Mix with tomato sauce and onion soup mix and bring to boil.
dump into a 9x13 pan
Top with basil, etc
Top with cheese
Open crescent rolls and place over the top of the mixture
bake in over for 3-5 minutes more than package says.
Let sit 5 minutes to gel.
