Roasted Broccoli Rabe (RTB.com Tailgate)

The recipe is ideal with spaghetti or another Italian pasta dish. If you still have a kid that is not totally against eating veggies, and is still impressionable, you may be able to introduce this to them. My 7 year-old loves broccoli now, which amazes the heck out of me.

3 Broccoli heads, cut into florets
salt (dash)
black pepper (dash)
1 cup parmesan cheese (freshly grated if possible)
1 lemon
olive oil

Heat the oven to 450 degrees.

What you want to do is mix the broccoli florets into the olive oil and coat before you roast it in the oven. Add salt and pepper as well. Toss.

Cook for 10 minutes

Remove and add the cheese. Return to the oven for 10 minutes. Ideally, you want a semi-solid crust over the broccoli.

((Again, fresh parmesan is best, as it tends to hold up better during the roasting process, but you can use the canned stuff too. It's not as good, however.))

Remove the broccoli from the oven and juice the lemon onto the broccoli.
