Looks amazing. For the past year or so I've been doing reverse sear by slow smoking with mesquite chunks on the grill until 117 or so then searing. But I like the potential of this method especially for infusing the garlic and rosemary flavors with the oil. I'm thinking that using ghee rather than oil would be even better.
May try a low smoke for half an hour or until about 85 degrees - then throw steak into ghee and into the oven until 117. Then sear. Need to make a Costco run...
