Thai One Pot (RTB.com Tailgate)

As the name implies, it's a one-pot dish, so prep and cleanup is a breeze. If you like Thai food, then you need to try this one. I suspect that it's a regional dish, since I've never actually seen it in a restaurant.

1 1/4 lb ground Italian sausage (originally this dish is made from ground pork, but it's totally off the hook with the sausage. Your choice.)
1 red bell pepper cut into strips
1 green bell pepper cut into strips
shitake mushrooms (buy the dried and soak them in warm water for 20-30 mins. Cut and discard the stems.)
1 teaspn salt
3/4 cups long-grain rice
2 1/2 cups chicken stock
3 tblspns soy sauce
1/4 teaspn cayenne (optional with the Italian sausage, unless you wanna sweat a little.)
4 green onions chopped
fresh bean sprouts
5 tblspns cilantro
1 lime juiced
oil

Heat your oil over med-high heat and quickly stir fry the peppers, shitakes, and salt. Fry for 3-5 minutes. Remove from pan.

Add the pork and brown.

Drain the fat and then add the peppers/shitakes/stock/rice/cayenne/soy sauce. Cook until rice is done, about 20 minutes.

Remove from heat, let stand for a few minutes, then add the cilantro, sprouts, and lime juice. mix well and serve.
